How to make alkaline rice dumplings

1. Soak the zongzi leaves for a day or a night, wash them and put them in a pot, boil the water to cover the zongzi leaves, cook for about 5 minutes, pick them out and soak them in cold water for later use. Wash the glutinous rice and soak them for about 4 hours

2. After soaking the glutinous rice, drain the water and put it back into the basin, add about 1/4-1/2 spoon of edible alkali, because there is still water on the rice grains, so the alkali will melt quickly. Stir it well immediately after adding it. Pay attention to stir it more so that the edible alkali can melt evenly. After mixing, let it stand for about an hour to allow the alkali to be thoroughly integrated into the rice grains.

3. Cut off a little bit of the stem of the zong leaf, and make a cone shape counterclockwise from the stem to the tip of the leaf, folding one side of the stem inside the tip of the leaf

4. Put the soaked and alkaline-mixed glutinous rice into the cone until it is 90% full, then poke it lightly with chopsticks.

5. Cover the top leaf with the tiger's mouth and make it into a triangle. The leaf is at the corner of the triangle facing the tiger's mouth.

6. Turn the leaf counterclockwise to one side of the triangle. (Hint: I am left-handed)

7. Finally, tie it with cotton thread (it is best to tie it with more than two circles of cotton thread)

8. Use the above method to wrap all the dumplings.

9. Put the rice dumplings into the pot, boil the water, turn off the medium heat for about an hour, put them into the stew pot and stew for about 4 hours before taking them out.
