Ingredients : 300g river shrimp, 1 scallion, 1 small piece of ginger, 5 dried chilies; Seasoning: 500g cooking oil (actual consumption: 30g), 1 teaspoon sesame oil, 1 teaspoon soy sauce, 2 teaspoons cooking wine, 1 teaspoon balsamic vinegar, 1 teaspoon refined salt, 1/2 teaspoon sugar, 1/2 teaspoon MSG;

Preparation steps: 1. Trim the whiskers and feet of the river prawns, wash and set aside; 2. Wash and cut the dried chili into sections; 3. Wash and cut the green onion into shreds; 4. Wash and mince the ginger; 5. Add oil to a hot pan and heat it to high temperature, pour in the prawns, stir a few times and quickly pick them up, drain the oil a little, and put them back into the pan, repeat three times; 6. Leave a little oil in the pan, add chili, green onion shreds, and minced ginger and stir-fry until fragrant, pour in salt, MSG, sugar, balsamic vinegar, and soy sauce, stir-fry for a few times, add cooking wine and stir well, when the juice becomes thick, pour in the river prawns, stir-fry for a few times, and drizzle with sesame oil.

Processing tips: 1. It is better to use vegetable oil for deep-frying shrimps. If you use animal oil, white sand will form after cooling, which will make people feel greasy; 2. Because it has a deep-frying process, you need to prepare 750 grams of peanut oil.
