How to make Provencal stew

1. Cut the eggplant into strips, cut the thin ones into half and the thick ones into quarters. Remove the seeds from the red and yellow bell peppers and cut into thick strips. Cut the melon in half and then cut into 1.5cm-2cm thick slices. Make a cross cut on the top of the tomato, blanch it in boiling water, peel it, and cut it into large pieces. Chop onion into large pieces. Chop garlic.

2. Heat a cast iron pan and sauté onions and minced garlic in olive oil.

3. Add the cut ingredients and stir fry.

4. When the ingredients become soft, add tomatoes and stir-fry evenly.

5. Add salt and freshly ground pepper and mix well. If there is not enough oil, you can add some olive oil.

6. Cover and simmer on medium heat for 20 minutes. Open the lid and simmer on high heat until the sauce is reduced. Taste. Serve on a plate and sprinkle some chopped herbs on top for garnish. It can be eaten hot or cold.
