Steps

1. Chop the chicken legs into small pieces, cut the green onions into sections, and slice the ginger and garlic. Add cooking wine, salt, soy sauce, sugar (just a little bit), ginger powder, mix well the chicken pieces, and marinate for 30 minutes (you can marinate in advance, and marinate longer if you have enough time).

2. Heat a pan with a little more oil, put the chicken pieces in and stir-fry to remove the moisture from the chicken. Stir-fry until dry and fragrant, then serve.

3. In a pan, sauté ginger, garlic slices, scallions, dried red chili peppers, and Sichuan peppercorns over low heat. Pour in the chicken pieces and continue stir-frying for five or six minutes.

4. If it is not salty enough, you can add a little soy sauce, but not too much. Finally, add white sesame seeds and leek segments (I happened to have them at home, so I added them to process the leeks. If you don’t have leeks, you can omit them), and stir-fry for one or two minutes.
