How to make curry beef dumplings

1. Chop the beef and onion into small pieces, stir-fry together, add oil, curry, sugar and salt, and finally add starch mixed with water to thicken. Put in a bowl and let cool.

Hold one end of the dough and "throw" (pat) it onto the work surface, then wrap the dough upwards. Then shoot and wrap 2-3 times in a row. Wrap with plastic wrap and let rest for 30 minutes

8.1 Gently tap the ghee dough (Note: hold your hand above the rolling pin, otherwise the force will be uneven). Roll it wide first and then long, and sprinkle flour under the dough from time to time (if it is too long, roll it up with a rolling pin and sprinkle flour on the table). First fold: 3, 3 (fold from top to bottom to 1/3, as shown by the yellow line in the picture, and then fold from bottom to top to form a rectangle. Wrap in plastic wrap and refrigerate for 20 minutes. (Note: Do not freeze!)

11. After taking it out of the refrigerator, shape it for the third time: width: 20 cm, length 45 cm (can be slightly longer)

12. Use a knife and ruler to trim the edges and divide into 6 equal parts; use a round mold (I used a cup lid) to round out the corners

13. Use a brush to brush a little egg liquid in the middle (put beef filling in it to make the beef filling and puff pastry stick together)

14. Divide the beef filling into 6 portions (about 45 grams each) and place them on the surface of the

15. Fold the puff pastry in half, with the upper part tilted slightly forward (just slightly beyond the lower part), and gently press the filling with your fingers, but do not press the rest of the part! (Otherwise it won’t expand.)

16. Brush the surface with egg wash (optional), bake in the oven at 210℃ for about 20 minutes, turn off the heat, and simmer for about 15 minutes with residual heat.
