How to cook braised squid

Twenty years ago, you wouldn't have chosen your own meals because the times didn't allow it. Twenty years later, you can choose your favorite meal, but you are too busy. But remember, don't let being busy take away your health. For the sake of health, please follow me to learn how to make braised squid

1.1 Slice the carrots and set aside

2.2 First, slice the green onion, ginger and garlic and set aside. (A few pictures are omitted here, just use this to represent it)

3.1 Clean the squid you bought. I bought a whole squid. After taking out the internal organs, tear off the inner and outer membranes, and then lay it flat on the cutting board for the key step - change the knife, cut vertically and evenly, and then cut diagonally. Do not use too much force when cutting, otherwise the squid will be cut. Also, be sure to change the knife on the back of the squid, so that it will be curled after blanching. The following will tell you which side is the front and back (one side of the squid is purple, which is the front, but you must tear off this layer of purple membrane before proceeding to the next step)

4.2 Cut the green pepper into small pieces at an angle and set aside.

5.1 Take out the cooled squid, drain the water and place it on a plate for later use.

6.2 Cut the cut squid into medium-sized pieces, and cut the squid tentacles as well. Boil water, add a few drops of cooking wine to remove the fishy smell, and prepare a basin of cold water for later use. Then put the cut squid in and blanch it. Be quick. When you see the squid curl up, take it out immediately and put it in cold water (this will make the squid taste crispy, because we will fry the squid later, so friends don’t worry about the squid not being cooked)

7. Preheat the oil in a pan and add onion, ginger and garlic and stir-fry until fragrant.

8. Then add carrots and stir-fry for one minute (carrots can dilute the oil, making the dish less greasy, and carrots also contain vitamins, so they will be more nutritious if fried)

9. Then add the blanched squid and stir-fry over high heat for a few times (must be on high heat, this will lock the moisture in the squid and make it taste crispier), add a little salt, a little sugar, and an appropriate amount of seafood soy sauce, then add the prepared green pepper and continue to stir-fry over high heat for 1 minute.

10. It’s done, the delicious braised squid is ready.
