Cooking method

Wash the elbow and put it into the pot, add cooking wine and blanch it for a while, then take it out with the soup and set aside;

Light a pot and pour in oil, add the yellow paste and stir-fry until fragrant, add a little hot water, then pour the pork elbow and soup into the pot, add cooking wine, onion, ginger, five spices, salt and rock sugar, bring to a boil over high heat then simmer on low heat for 2-4 hours.

Accessories: onion, ginger, one tablespoon of cooking wine, two tablespoons of bean paste (yellow paste)

Seasoning: salt, star anise, cinnamon, five-spice powder, pepper, one tablespoon of rock sugar, one tablespoon of light soy sauce, and one tablespoon of dark soy sauce. [1]

Cooking method

Prepare the ingredients.

Remove the bones from the elbow.

Sprinkle the pork elbow with appropriate amount of pepper and five-spice powder, evenly spread a tablespoon of bean paste (yellow paste), and marinate for 2 hours.

After marinating, put it into water and boil it over high heat. Take it out, rinse off the floating foam, drain the water and set aside.

Put water in the pressure cooker until it covers half of the elbow, then pour in a tablespoon of cooking wine, a tablespoon of bean paste, a tablespoon of rock sugar, a large tablespoon of light soy sauce, and a tablespoon of dark soy sauce. Add onion, ginger, star anise, cinnamon and appropriate amount of five-spice powder, add appropriate amount of salt to taste, bring to a boil in the pressure cooker and cook for 20 minutes.

Wrap the braised pork elbow tightly with gauze while it is still hot, let it cool down, and refrigerate it overnight.

Slice the pork elbow quickly and it is ready to eat.
