How to cook spicy pork trotters

Sometimes we find that there are always a few people around us who like cooking very much. They regard cooking as a hobby of theirs. Every dish is their own successful work. We should not always envy others' talents. In fact, we can learn it. The following is an introduction to twice-fried spicy pig's trotters. Let's get started now.

1. I want to cook the whole pig's trotter, but Mr. Lou has already bought it and asked the butcher to chop it up. That's fine. Wash the pig's trotter thoroughly with warm water to remove the blood.

2. Bring the water to a boil, put the pig's trotters in for the first rinse. You can see how much floating residue there is.

3. Add water to the pot and boil it for the second time. Add cooking wine to remove the fishy smell. White wine is also OK. After blanching, use a knife to scrape off the remaining fine hair on the pig's trotters. I checked them one by one, for fear of seeing hair when eating.

4. Cut the green onion into sections, peel and cut the ginger into pieces, and prepare three star anise for later use

5. Put the washed pig's trotters into the high pressure rice cooker, add star anise, green onion, ginger, 2 teaspoons of white wine, and finally 1 large bowl of hot water.

6. Cover the pressure cooker and simmer for 1 hour

7. Take out the stewed pig's trotters and let them cool down slightly.

8. Prepare the bean paste, bean curd paste, and garlic sprouts, wash and cut into sections for later use

9. Put oil in the pan, add fermented black beans and Pixian bean paste and stir-fry after the oil is hot.

10. After the oil turns red, add minced ginger and garlic to bring out the aroma

11. Next, add the pig's trotters and stir-fry evenly, coating the trotters with the sauce.

12. Add light soy sauce for coloring, you can add a little more

13. Add sugar for seasoning

14. Add the chopped garlic sprouts into the pan and fry until fragrant. You can add a little salt and chicken essence to season and it is ready to serve.

15. After frying, the whole house is filled with fragrance, which really whets people's appetite. I especially like fermented black beans... so this is exactly what I want.

16. What should I do if I eat so much every day and my body is in poor shape?

After reading the above introduction to twice-fried spicy pork trotters, you must be eager to try it. So, take advantage of the latest and most complete memory now and go to the kitchen to learn how to make it. Of course, it is impossible for most people to succeed at once. But if you try it repeatedly, you will definitely be able to enjoy the "sweetness" of the delicacy.
