Steamed flat fish recipe

1. Prepare a live flat fish, ask the seller to help you kill it, remove the fins, wash it, cut 3 cuts on both sides of the fish body, add salt and cooking wine, gently rub the surface and belly of the fish, marinate for 10 minutes, then wash and set aside

2. Heat oil in a pan

3. Peel the ginger and cut it into thin strips, then put it into the hot oil pan and stir-fry until fragrant.

4. Remove the head and tail of a red pepper, poke out the seeds with chopsticks, cut into rings and put into hot oil pan to stir-fry.

5. Pour the hot oil, ginger and red pepper rings over the flat fish while it is still hot.

6. Add appropriate amount of salt, chicken essence and sugar to the flat fish, add water to the pot and bring to a boil, put the fish into the pot and steam it over high heat for 5-8 minutes, and remove from the pot when the fish eyes bulge outwards
