Fried rice noodles with onion and shrimp ①Ingredients: an onion, a few fungus, a red pepper, dried shrimp, carrots, salt, and light soy sauce. ②Method : 1. Boil water, cook the rice noodles thoroughly, then rinse with cold water for later use. 2. Chop onions, fungus, red pepper, dried shrimps and carrots. 3. Heat up a pan with oil, sauté onions and red peppers, then add fungus, shrimps and carrots. 4. Add the rice noodles into the pan and stir-fry for a few minutes until thoroughly mixed. It is best not to stir-fry excessively with a spatula. The noodles will break if you use a spatula to stir too much. It is best to toss them in the pan. Add appropriate amount of salt and light soy sauce to season and serve. 3. Fried rice noodles with dried shrimp ①Ingredients: 15 dried shrimps, a piece of carrot, 100 grams of mung bean sprouts, two green onions, and a few slices of ginger. ②Method: 1) Soak the dried shrimps in clean water with a little cooking wine for about an hour, then cut them in half and wash off the sand. 2) Soak rice noodles in clean water until soft and set aside. 3) Cut carrots into thin strips and set aside. Cut green onions into small sections. 4) Blanch the bean sprouts in boiling water and remove from the water. 5) Take a bowl and add a little salt, light soy sauce, dark soy sauce, a little sugar and three spoons of cold boiled water to make a sauce. 6) Heat the oil and sauté the ginger and scallions until fragrant. Add the dried shrimp and carrot shreds and stir-fry until fragrant. Add the soaked rice noodles and bean sprouts and stir-fry together. Pour in the sauce (5) and stir-fry until colored. Sprinkle with chopped green onions before serving. Mix well and serve. |
