How to make homemade mushroom stewed chicken

1. Debone the chicken thighs (you can also leave the bones in, my family doesn't like meat with bones) and cut them into large pieces. Heat the oil in a pan, add the chicken and stir-fry until it changes color.

2.1 Add chicken broth (I use the removed bones to make broth, you can also add water if you don’t have it, but the taste will of course be a little different) until it covers the ingredients. Bring to a boil over high heat, then reduce heat, cover and simmer until the chicken is soft.

3.2 Scoop out the fried chicken that has changed color, leave some oil in the pan, add ginger slices, garlic and onions and stir-fry until fragrant, then add the chicken and stir-fry together, add cooking wine, sugar, salt, a little soy sauce for coloring, and add star anise and mushrooms.

4. Add the green pepper pieces in the last few minutes. After the chicken, mushrooms and green peppers are well-seasoned, add salt and sugar to taste, then remove from heat and add chopped green onions.
