How to make braised pork with white radish

1. Cut the pork belly into pieces, add cold water into the pot, add ginger slices and cooking wine, blanch it, skim off the foam and set aside.

2.12 While the pork belly is blanching, wash and cut the white radish into pieces.

3.21 Chop the scallion into sections, slice the ginger and garlic, cut the chili into rings, and set aside the peppercorns, star anise, cinnamon, bay leaves, and rock sugar; add two spoons of cooking wine, one spoon of super fresh soy sauce, half a spoon of dark soy sauce, and a quarter spoon of vinegar to make the sauce. (The proportion and amount of sauce should be determined according to your taste and the amount of ingredients.)

4. Heat the pan, add the pork belly directly and stir-fry over medium-low heat to release the oil. The fat will be slightly charred. If there is too much oil, you can save some for frying other dishes.

5. Add onion, ginger, garlic, chili pepper, Sichuan pepper, star anise, cinnamon, bay leaves and rock sugar and stir-fry until fragrant.

6. Add radish and stir-fry evenly.

7. Add the sauce from step 4 and stir-fry.

8. Add boiling water to cover the ingredients, bring to a boil over high heat, transfer to an electric pressure cooker and simmer for 30 minutes. (If you don’t have a pressure cooker, you can simmer on low heat for more than 1 hour.)

9. Transfer to a wok and cook over high heat until the sauce thickens. Add salt and chicken stock according to taste and serve.
