3.1 Put the marinated fish into a baking tray lined with tin foil, place scallion and ginger slices on the bottom of the baking tray, brush the fish with oil, soy sauce and pepper oil, sprinkle with a little chili powder, and bake in a preheated 220-degree oven for 20 minutes (you can take it out in the middle and brush it with soy sauce, oil and pepper oil again)

4.2 Cut the bamboo shoots into strips, slice the potatoes, and cut the tofu skin into triangular pieces. In fact, the knife skills are all random.

5. We should not leave the fish idle while it is in the oven. Heat the pan with oil (add more oil than usual for cooking). When the oil is hot, stir-fry the onion, ginger, garlic, Sichuan pepper and chili pepper. After the aroma comes out, add a tablespoon of Pixian bean paste

6. Add the chopped side dishes and stir-fry for half a minute

7. Add clean water (just enough to cover the vegetables), cover the pot and simmer for ten minutes.

8. Remove ginger and scallions from the grilled fish and pour the stewed side dishes over the fish. Sprinkle with fried peanuts. Return to the oven and bake for a further five minutes.

9. Sprinkle with coriander and serve.

10. Eat while hot.
