Classic Northeastern recipes

1. Bring a pot of boiling water to boil the ribs for one minute to remove the blood, then wash them clean.

4. Add sauerkraut to the pork ribs and simmer for another 40 minutes.

5. Sprinkle some salt into the soup to make it just the right saltiness.

6. Mix together mashed garlic, soy sauce, chili oil, fermented bean curd, chives and chopped coriander in a certain proportion.

Chicken stew with hazel mushrooms

1. Soak the Northeastern hazel mushrooms in clean water until soft, remove the roots, wash them clean, and soak the vermicelli in clean water until soft;

2. Cut the whole chicken into large pieces and blanch them; 3. After the oil in the pan is hot, add the onion, ginger, pepper and star anise and stir-fry until fragrant, then add the chicken and stir-fry evenly;

4. Pour a little cooking wine and dark soy sauce to color, add salt to taste, and pour hot water to cover the chicken;

5. Add the hazel mushrooms and stew for 20 minutes. Add the softened vermicelli and continue stewing for 5 to 6 minutes.

In addition: In Northeast China, green onions are an important auxiliary ingredient.

Three Fresh Vegetables

【Material】

100g eggplant, 1/2 red pepper, 3 green peppers, 150g potato, 1 small piece of ginger, 5 cloves of garlic, some starch

500g cooking oil (actual consumption: 30g), 1 tsp salt, 1/2 tsp sugar, 1/2 tsp MSG

1. Peel the potatoes first, then wash the potatoes, eggplants and peppers, cut them into dice of the same size, put the starch in a bowl and add appropriate amount of water to mix well.

2. Chop ginger into pieces,

3. Chop the garlic into fine pieces.

4. Heat the oil in a pan, fry the eggplant and potatoes until golden brown, then remove from the pan and drain the oil.

5. Leave a little oil in the pot, add chili and minced ginger and stir-fry, then pour eggplant, potato and other seasonings into the pot. Add minced garlic and starch before serving. Thicken and serve.
