1. Use a small brush to scrub the skin of the potatoes, put them in the pot, and add water that just covers the potatoes.

2. Bring to a boil over high heat, then turn to low heat and cook for about 20 minutes. When you can easily insert a chopstick into the potatoes, turn off the heat. (The cooking time should be increased or decreased according to the power of your stove and the size of the potatoes.)

3. Rinse with cold water. The potatoes can be easily peeled after cooling down.

4. Use the back of a knife to gently flatten and crack the potatoes. Be careful not to use too much force to avoid crushing the potatoes.

5. Heat a thin layer of oil in a frying pan and add the potatoes.

6. Fry on medium heat until golden brown, then turn over and fry until golden brown

7. Sprinkle an appropriate amount of pepper and salt, depending on your taste. If you like the light sweetness of potatoes, you can put less pepper and salt. If you like the taste of pepper and salt, you can put more.

8. Shake the pan a few times to let the potatoes turn over. When the surface of the potatoes is evenly coated with pepper and salt, turn off the heat and sprinkle with chopped green onions after serving.
