How to make pork elbow in soy sauce

I always envy other people’s tables full of delicious food. Well, here I will show you how to cook the dish of braised pork elbow in soy sauce.

1. Wash the pork elbow and pluck the hair with tweezers. Cut an incision along the bone with kitchen scissors and easily cut off the bone along the fascia. This requires skill. Just be careful and patient. Don't cut the pig skin. (You can ask the merchant to do this step for you) Put the boneless pork elbow into a large bowl, add a little salt, pepper, star anise, ginger and a tablespoon of soy sauce, mix well, marinate for 1 hour, then roll it up and tie it tightly with cotton thread.

2.1 In another stew pot, add appropriate amount of water (just enough to cover the pork elbow), add ginger slices, scallion segments, cooking wine, various spices, soy sauce, rock sugar, dried red peppers, fermented bean curd juice, garlic and appropriate amount of salt. It is recommended that the soup must be salty enough so that the pork elbow will taste good. Bring to a boil over high heat, then turn to the lowest heat and cook for 2 hours. Turn off the heat and wait for it to cool down. Then put it in the refrigerator and soak for more than 12 hours.

3.2 Add a little water, cooking wine, scallion segments and ginger slices to the pot and bring to a boil. Add the pork elbow and cook over high heat for 10 minutes. Remove from the pot and place in cold water to cool.

4. Slice and eat.
