Homemade stir-fried vegetables

3. Heat oil in a hot pan until it is 50% hot, add ginger slices and scallion segments and stir-fry until fragrant, then add mushrooms, black fungus and bean curd sheets and stir-fry for a while, then add rice wine, dark soy sauce and light soy sauce and stir-fry evenly.

4. Add the water used to soak the mushrooms, bring to a boil over high heat, then turn to medium-low heat and cover and simmer for a while. Next, add carrots and king oyster mushrooms and stir-fry. At the same time, add sugar and salt to season and continue to simmer for a while to let the ingredients absorb the flavor.

5. Finally, add the water chestnut slices and stir-fry until the water chestnuts become translucent. Cook over high heat until the soup thickens. Drizzle with sesame oil before serving.

6. Serve on a plate. It is delicious whether eaten hot or cold.
