1. Half a pound of pork belly. Be sure to use pork belly. Being completely thin or completely fat is not okay.

2. One pair of duck offal. Wash the duck viscera and pork belly, put them into a pot, add water and cook until done, then let cool.

3. Wash the cucumber and set aside.

4. Wash the young ginger and set aside.

5. Wash the leeks, put water in the pot, boil the water, put in the leeks, blanch for about 1 minute, and then take out the leeks. (Don’t blanch the leeks for too long, or they will become soft and can’t be tied)

6. Wash the duckweed and set aside.

7. Cut the cooked pork belly, washed cucumber and young ginger into small pieces about 4cm long, 1.5cm wide and 0.5cm thick. Cut the duck viscera into thin slices about 1.5 cm wide, and pick the leek leaves one by one.

8. Put together a portion of each of the cut ingredients (duck liver, duck heart, duck kidney, duck intestine, cucumber, young ginger, pork belly, duck salad), and tie them up with leeks.
