How to make pickled cabbage and minced meat vermicelli

1. Prepare vermicelli and soak it in warm water until soft, but don't soak it completely.

2. Chop the sauerkraut, minced meat, and chopped green onions, place them separately, and marinate the minced meat with starch and soy sauce for five minutes.

3. Prepare a bowl of broth (leave a bowl of chicken broth from stewing the chicken), drain the chicken and only keep the broth.

4. Drain the vermicelli and cut it with scissors.

5. Add oil to a pan, pour in sauerkraut and chili peppers and stir-fry for one or two minutes.

6. Add the vermicelli and stir-fry for half a minute. Pour a teaspoon of soy sauce and a little salt and stir well to change the color of the vermicelli. (Since wide vermicelli is not easy to color and taste, add soy sauce and salt in advance)

7. After the vermicelli is colored, pour in the chicken soup and add a bowl of water. Bring to a boil over high heat and then simmer over low heat.

8. When the soup is not too much, add the minced meat and stir until it is loose.

9. Finally, add chicken essence for seasoning, sprinkle with chopped green onions and serve.
