3. Cut off the head and tail and keep them for later use. Slice the fish meat into two pieces along the middle fish bone.

4. With the fish skin facing down, use a slanting knife to remove the large spines from the fish body, and then cut it into slices of appropriate thickness.

5. Slice the ginger and garlic, and break the dried chili into small pieces.

6. Pour an egg white into the fish fillet, add salt, cooking wine and starch, mix well and marinate for 20 minutes.

7. Pinch the roots of the soybean sprouts, wash and set aside.

8. Put the bean sprouts into clean water with a little salt and cook until soft and cooked, then remove from the pot.

9. Spread it on the bottom of the container containing boiled fish.

10. Place the pan on the fire, pour in oil, add the peppercorns and fry slowly for about 2 minutes.

11. Pour in dried chili peppers and bean paste, and stir-fry until fragrant and red oil comes out.

12. When the pepper changes color, remove half of the peppercorns and chili peppers and set aside; pour the garlic slices and ginger into the pot and stir-fry until fragrant.

13. Add the fish head, tail and fish bones and stir well.

14. Add appropriate amount of hot water to cover the fish.

15. After the water boils, put the fish fillets into the pot one by one and stir gently with chopsticks.

16. Cook until the fish fillets change color and are cooked, about 1 to 2 minutes.

17. Pour the fish fillets and fish soup in the pot into the bowl with bean sprouts.

18. Place the peppercorns and chili peppers prepared in advance in a bowl and pour in the hot oil.
