How to make five-spice fried fish

1. Clean the fish, remove the fishy smell, and chop off the head and tail. Chop the middle section into pieces. Then chop the larger pieces in half. Clean thoroughly.

2. Start marinating: add chopped ginger (optional). Add three spoons of cooking wine. Add 3 spoons of light soy sauce. Add two spoons of dark soy sauce. Marinate for two hours.

3. Take out the marinated fish pieces and let them dry (about two hours), then remove the ginger powder stuck on them.

4. Add a little more oil to the pan. When the oil temperature is very high (add some minced ginger, and it's almost done when it hears a puffing sound), carefully put in the fish pieces and start frying. Do not turn the fish pieces over in the middle, otherwise the fish pieces will break. But if you don't turn the fish pieces over, they will easily stick to the pan and get burnt. So I have another trick, which is to put the fish pieces in a large colander and then put it into the pan. Fry until the fish pieces shrink and all the moisture inside is fried out, and the surface is golden brown. But in order to make the fish pieces taste better, you can fry them again after taking them out of the pan after the first frying. That way, the fish pieces will have basically no moisture and the taste will be quite good.

5. After frying the fish, add a little water to a clean pot, put in fennel and cinnamon, and cook for about five minutes. If there is not enough water, you can add more.

6. Add three spoonfuls of the juice from marinating the fish fillets earlier into the pot. Add a spoonful of sugar and season it to your taste, making it salty with a hint of sweet.

7. Add the fried fish pieces. Stir carefully to incorporate the juices into the fish. Since the fish pieces are freshly fried, they absorb water very quickly. It will be ready in about a minute.
