Homemade Chicken Stew

Main ingredient : Chicken

Accessories: soy sauce, salt, sugar, MSG, onion, ginger, pepper, aniseed, cooking oil

Steps:

1. Cut the chicken into pieces, blanch it in water for 5 minutes, and then drain the water from the blanched chicken.

2. Heat cooking oil in a pot, then add onion, ginger, peppercorns and star anise and stir-fry.

3. Add the chicken and stir-fry, then add soy sauce and sugar seasoning.

4. Add clean water into the pot, simmer for 40 minutes, add salt and MSG to season.

Potato stewed chicken legs

Ingredients: 500g chicken legs, 200g potatoes

Accessories: 1 green pepper, 5 grams of green onion, 5 grams of ginger, 1 star anise, 2 grass fruits, 2 teaspoons (10 grams) of sugar, 2 teaspoons (10 ml) of dark soy sauce, 1 teaspoon (5 grams) of salt

Steps:

1. Wash the chicken legs and cut into pieces, peel the potatoes and cut into dice.

2. Pour cooking oil into the pot, heat it up, then add chopped green onion and ginger and stir-fry until fragrant.

3. Pour in the chopped chicken pieces and stir-fry, then add star anise, cardamom, sugar, dark soy sauce, water, and potato pieces and stir-fry.

4. When it is almost dry, add green pepper pieces and salt, and remove from the pan after the sauce is reduced.

Chicken stew with yam

Main ingredients: half a hen (the amount of meat depends on the number of people)

Ingredients: Chinese yam (peeled, cleaned, and cut into pieces), ginger, onion, pepper, codonopsis, angelica, red dates, wolfberry, cooking wine, white vinegar, salt

Main steps :

1. Wash the hen meat with warm water, cut into pieces and set aside.

2. Fill the pressure cooker with water, pour in the chicken pieces, add ginger slices, 7 or 8 peppercorns, a teaspoon of white vinegar, and a teaspoon of cooking wine to cook the soup.

3. After the chicken soup is cooked in a pressure cooker, pour the soup into a casserole, add codonopsis, angelica, red dates, and wolfberry and bring to a boil over high heat. After simmering the soup over low heat for 30 minutes, pour in the yam pieces and continue to simmer over low heat for 20 minutes.

4. Add a little salt and sprinkle with chopped green onions.

Chicken stew with mushrooms

Ingredients: whole chicken drumstick (about 300g), 5 dried mushrooms

Accessories: 4 slices of old ginger, 3 cloves of garlic, 1/4 red pepper (about 10g), 1/4 green pepper (about 10g), 1 tablespoon (15ml) sesame oil, 2 teaspoons (10ml) dark soy sauce, 1 tablespoon (15ml) rice wine, 1 teaspoon (5g) white sugar, 2g salt

Main steps:

1. Wash the chicken legs, dry them with kitchen paper, and cut them into pieces.

2. Slice the garlic and cut the red and green peppers into shreds. Soak dried shiitake mushrooms in water until soft, wash away the sand and drain.

3. Use a deeper container, pour in sesame oil, place the container in the microwave, and heat at 900 watts (or high) for 1 minute.

4. Take out the container, put in the chopped chicken legs, garlic slices, and ginger slices, mix well with chopsticks, cover with a lid (or seal the container with microwave-safe plastic wrap), put it back in the microwave, and heat at 900 watts (or high heat) for 5 minutes.

5. Take out the container, add the soaked mushrooms, dark soy sauce, rice wine, white sugar, salt, and 500 ml of water. Mix well and put it back in the microwave and heat at 900 watts for 20 minutes.

6. Sprinkle with shredded red and green peppers for garnish.

Winter melon stewed chicken

Ingredients: 2 chicken legs, 1/4 bamboo shoot, 700g winter melon

Accessories: 5 slices of ginger, 1 scallion, 30cc rice wine, 1600cc water, 15g salt, 5g sugar

Main steps:

1. Peel the bamboo shoots, wash and slice them; peel the winter melon, wash and cut into pieces; cut the ginger into shreds and chop the green onions for later use

2. Wash and cut the chicken legs into pieces. Put them into a container and add water until the chicken pieces are covered. Cover with heat-resistant plastic wrap and heat in a strong microwave for 5 minutes.

3. Put bamboo shoots, winter melon, shredded ginger, chopped green onion, rice wine and water into a container, cover with heat-resistant plastic wrap, and heat in a strong microwave for 15 minutes.

4. Take out the container, add salt and sugar, mix well, and simmer for another 15 minutes.
