How to make Hong Kong style pineapple buns

3. Put all the bread ingredients except butter into the bread machine in the order of milk, sugar, egg liquid, milk powder and high-gluten flour, and place salt and yeast diagonally.

4. After kneading into a smooth dough, add the softened and diced butter and knead the dough for another 20 minutes.

5. Knead the dough until it reaches the expansion stage.

6. When the dough has fermented to twice its size, poke a hole in the dough with your finger. It is ready if the hole does not shrink.

7. Start fermentation, ferment at room temperature for about 1 hour in summer.

8. Divide into 6 parts.

9. De-deflate each dough and knead it into a ball.

10. When kneading the dough in the bread machine, you can prepare pineapple peel, beat the softened butter with a whisk until it turns white, pour in powdered sugar, salt, sugar, and milk powder, mix well, add egg liquid three times, mix with butter separately, stir until the butter and egg liquid are completely blended, pour in low flour, gently stir evenly, knead into dough and refrigerate for later use.

11. After rolling the dough into a ball, cover it with plastic wrap and let it rise for 15 minutes.

12. Divide the pineapple peel dough into 6 portions as well, each portion should be slightly larger than the bread dough.

13. Use your palm to flatten the divided pineapple peel dough.

14. Wrap more than 3/4 of the dough with pineapple peel.

15. After brushing with egg liquid, use a knife to gently score a checkered pattern on the pineapple skin.

16. After making the patterns, carry out the final fermentation. When it is about twice as large, put it into the oven preheated to 200 degrees, and bake at 180 degrees for about 20 minutes until the surface of the pineapple skin is colored.
