How to cook small crabs

As we all know, crab is a food ingredient with extremely high nutritional value. It also has certain medicinal value and tastes good, so crab is a very popular food ingredient. When it comes to size, there are big crabs and very small crabs. If you are not careful about how you cook the small crabs, they will not only be very troublesome to eat, but they will also not taste good. So, how do we make very small crabs delicious?

1 Spicy Crab

Material

500g frozen small crabs 50g green peppercorns 50g dried red chili peppers 2 tablespoons (30g) chopped green onions 2 tablespoons (30g) chopped ginger 2 tablespoons (30g) chopped garlic 1 bamboo shoot 1 lotus root 2 tablespoons (30ml) koji wine 4 tablespoons (60ml) chili sauce 1 teaspoon (5ml) soy sauce 1 teaspoon (5g) sugar 1/2 teaspoon (3ml) vinegar

1) Rinse and cut the crabs into pieces, then marinate with rice wine for 10 minutes. Peel the bamboo shoots, clean and cut into pieces. Peel the lotus root, wash and cut into pieces.

2) Add oil to the pan, and when it is slightly warm, add the green peppercorns and dried red peppers. After they are fragrant, add the chopped green onion, ginger and garlic.

3) Add crab pieces and stir-fry until crab legs turn red, then add bamboo shoots and lotus root pieces and stir-fry.

4) Add chili sauce, soy sauce, sugar and salt, pour in appropriate amount of water (the height should be 1/3 of the food in the pot), cover and simmer over medium heat for 2 minutes, then open the lid and reduce the soup over high heat.

2 Golden Sand Crab

Material

Main ingredients: 1 Vancouver crab

Seasoning: salt, pepper, salted duck egg yolk

1. Soak the crabs in clean water for 20 minutes, then clean the surface.

2. Unscrew the crab claws first, so you don’t have to worry about your hands being pinched by the big claws.

3. Clean the crab body.

4. Chop into pieces and season evenly with salt and pepper.

5. Coat with a little flour before frying.

6. Put it into the electric fryer and fry until cooked, then cut it into small pieces and place it on a plate for later use.

7. Boil the salted duck eggs and mash the egg yolks into a paste.

8. Heat a little oil in a wok, then add egg yolks and stir-fry until fragrant.

9. Finally, return the fried crabs to the pan and stir-fry with the salted duck egg yolks, allowing the egg yolks to evenly coat the crab pieces.
