1. Add yeast and water, stir well and let stand. Pour flour, salt and powdered sugar into a large bowl and mix well. Pour in softened butter and rub evenly with your fingers.

2. Chop the mozzarella, add the eggs, pour in the yeast water, knead into a ball (no need to knead too much, just form a ball), seal it, put it in the refrigerator, and ferment at low temperature for more than ten hours (I fermented it overnight)

3. Take it out and flatten it into a 2 to 3 cm thick slice with your palm. Use your favorite mold to press it into shape and place it on the baking tray. Without a mold, press it into a round cake shape and cut it into six to eight pieces with a knife.

4. Preheat the oven to 180 degrees, brush a layer of egg liquid on the surface of the scone, and bake in the middle layer of the oven for about 25 minutes until it is colored.

5. Take it out immediately after baking and eat it while hot. It is very soft and delicious. If it becomes hard when cold, you can heat it in the microwave for 30 seconds.
