In fact, Shaanxi is also known as the Northwest region, and some people call it northern Shaanxi. In Shaanxi, my country, there are many delicious snacks that are famous throughout the country. The snacks in Shaanxi all carry the characteristics of the Shaanxi people, not only because their production methods are unique, but also because their raw materials are also collected from the best quality. So what are the special pasta products in the Northwest?

Biángbiáng noodles are a traditional Shaanxi specialty noodle dish, and are the traditional Shaanxi belt noodles. It gets its name because of the biang, biang sounds made during the production process. It specifically refers to flour ground from Guanzhong wheat, which is usually hand-pulled into long, wide and thick noodles. It is made from high-quality flour, and the noodle soup is mixed with soy sauce, vinegar, MSG, pepper and other condiments. The noodles are then put in and drizzled with hot vegetable oil.

Saozi noodles are a traditional noodle dish specializing in Northwest China and a famous Xifu snack. The most authentic one is Qishan Saozi noodles in Baoji. It is prevalent in the Guanzhong Plain of Shaanxi and Longdong of Gansu. Saozi noodles have a long history.

Yangling Dipped Noodles

Yangling dipped noodles is a famous Han Chinese snack in Shaanxi. Yangling is a place name. It was not called Yangling in the past, but Yangling. It is the mausoleum of Emperor Wen of Sui Dynasty. It is under the jurisdiction of Wugong County, a wheat-producing county in Guanzhong. It was renamed Yangling when the Yangling Agricultural Demonstration Zone was built.

Huxian Baitang noodles were adapted from rural臊子面 by Dan Jiqing Noodle House in the county seat. With its unique craftsmanship and excellent seasoning, it is loved by the people in the county. It is a famous noodle snack in Huxian County. It and "Big Meat Lazi" are two famous specialties of Huxian County, and have been selected into the sequence of famous Chinese food snacks.

Huxian soft noodles

Huxian soft noodles are one of the "Eight Wonders of Guanzhong" - "noodles are like belts". The "Eight Weird Things in Guanzhong" refers to eight peculiar customs and habits that appeared in the Guanzhong area of ​​Shaanxi Province (roughly including Xi'an, Xianyang, Weinan, Baoji, Tongchuan, north of the Qinling Mountains and south of the Loess Plateau). Due to the influence of climate, economy, culture and other factors, the Guanzhong region has formed some unique ways of clothing, food, housing, transportation, etc.

Sishilipu Lamb Noodles

Sishilipu mutton noodles is one of the most famous traditional snacks in northern Shaanxi. Sishilipu mutton noodles from Suide, Shaanxi can be found in many places. In northern Shaanxi, there is a folk song that is known to everyone. That is, "the women from Mizhi, the men from Suide, the slates from Qingjian, the charcoal from Wayaobao, and the mutton noodles from Sishilipu." The mutton in Sishilipu mutton noodles is selected from the fat and tender goat meat in northern Shaanxi. The meat is fresh and tender, and it is the best mutton. The noodles are pulled into noodles.

Flag flower noodles

Qihua noodles, also known as Qihua noodles, are a unique Han Chinese snack from Wugong County, Shaanxi Province, and are well-known far and wide. It is called "Qihua Noodles" because of the colorful flowers floating on the bowl that look like flowers but are not flowers; it is also called "Qihua Noodles" because the egg skins, chopped green onions, kelp shreds, day lilies, etc. used in it are cut into parallelograms or triangles like small flags, hence the name "Qihua Noodles".

Wo Wo Noodles

Wo Wo noodles is a famous dish in Yaozhou District, Shaanxi Province. The finished noodles are round in shape and float in the bowl. The soup is clear and delicious, with red and green colors complementing each other. It began during the Daoguang period of the Qing Dynasty and has a history of more than 100 years. There is a saying popular in Yaozhou: "After trying all the delicacies in the world, Yaozhou Wo Wo noodles are the best choice."

Shaanxi donkey hoof noodles

This is a kind of noodle dish in Gan County, named because its shape resembles a donkey's hoof. The noodles are chewy, gluten-resistant and filling. Whenever I eat this kind of noodles, I think of my mother kneading the noodles on the chopping board. Warm, this is the feeling of home.
