Fried fish noodles

What do you do when you are unhappy? Maybe you will choose to cry or laugh, or go out and have fun, or smoke or drink, etc., but I believe there are definitely people who are willing to choose "eating". When you are unhappy, you might as well make something delicious for yourself, maybe your mood will improve immediately. Well, let me first introduce the method of making fried fish noodles.

1. Choose a live grass carp weighing more than 2 kilograms and ask the fish stall to slaughter it for you. After taking it home, just rinse it inside and out.

2. Use a sharp knife to remove the head and tail of the fish, leaving only the fish body, and cut it into 1.5cm-2cm wide pieces.

3.Cut each fish piece in half and cut into fish strips. Pour appropriate amount of white pepper and salt and marinate for 15 minutes.

4. Beat in an egg white, 5 spoons of sweet potato starch, and 1 spoon of peppercorns.

5. Mix all the batter ingredients and fish evenly so that each fish fillet is coated with starch paste.

6. Chop the onion, ginger and garlic finely.

7. Take a large bowl and put it in it.

8. Add two spoons of cooking wine, two spoons of light soy sauce, two spoons of dark soy sauce, two spoons of sugar, one spoon of sesame oil, one spoon of MSG, one spoon of salt, and a small bowl of warm water to make the sauce.

9. Put a little more oil in the wok because the fish needs to be fried. At the same time, throw in a few slices of ginger (to remove the fishy smell and prevent it from sticking to the pot). When the oil is 80% hot, put the fish strips into the pan.

10. Use high heat first, then low heat, and fry the fish strips until crispy and golden brown. (It is best to fry it again for a crispier texture)

11. Remove from the heat and drain the oil.

12. Pour out the excess oil in the pot, leaving a little base oil, add the onion, ginger and garlic and stir-fry over low heat until fragrant.

13. Pour in the previously prepared sauce.

14. Turn up the heat and turn off the heat after boiling.

15. Add the fried fish strips and cook for 4 to 5 minutes.

16. Side dishes: leeks, greens, tomatoes

17. Cook the thin noodles, rinse with cold water, drain and put into a bowl.

18. Pour a few spoonfuls of fried fish topping.

19. A bowl of fried fish noodles with crispy and fragrant fish meat and mellow soup is ready.
