1. Soak four dried shiitake mushrooms in cold water in advance. You can soak them before going out in the morning and when you come back at noon.

2. Wash the pork and cut it into strips. You can use lean meat or pork belly as you like.

3. Cut the green and red peppers into shreds, cut the soaked mushrooms into shreds, cut the onions and ginger into sections, and mince the garlic.

4. Boil a pot of water, put in the noodles after the water boils, and cook until they are 70% cooked, that is, pinch the noodles with your hands and you can see the white core inside, drain and take them out.

5. Rinse the noodles in cold water to prevent them from sticking. Mix light soy sauce, dark soy sauce, sugar and broth to make the sauce for noodles and set aside.

6. Heat oil in a pan and sauté onion, ginger and garlic. Add shredded pork and mushrooms and stir-fry until fragrant. Then add green and red peppers and stir-fry for a few times.

7. Turn to medium-low heat, add the noodles, and use chopsticks to stir evenly; pour in the sauce and mix the noodles with chopsticks, then add salt, chicken essence and white pepper before serving.
