Below, I will introduce to you in detail the methods of making several well-known snacks.

1. Nanjing Duck Blood Vermicelli Soup

Ingredients: 500-800g duck soup, 150-200g vermicelli

Accessories: 30g spicy duck blood, 50g duck gizzard, 70g duck intestine, 80g duck liver, 50g bean curd, half a marinated egg

Seasonings in the bowl: 1-2 grams of salt, 1 gram of MSG, 1 gram of chicken powder, 2 grams of duck blood soup seasoning, 2 grams of sour beans, 3 grams of peanuts, 2 grams of mustard, 2-3 grams of coriander, 5 grams of chives, 5 grams of duck oil

Preparation: (1) Take a stainless steel vermicelli colander, add vermicelli and bean curd and cook for 1 minute; (2) Take a bowl, put salt, MSG, chicken powder, duck blood soup seasoning, sour beans, mustard and duck oil in the bowl, pour in the blanched vermicelli and duck soup, pour in the spicy duck blood, duck gizzards, duck intestines and duck liver, sprinkle coriander, green onions and peanuts on the vermicelli and serve.

2. Double hemp fire

Ingredients: 2.5 kg flour, 1 kg vegetable oil, 5 g star anise flour, 500 g sesame seeds, 50 g salt

Preparation method:

1. Prepare sesame kernels: Soak sesame seeds in cold water until the skin can be removed by twisting with fingers, remove from the water, pound with a stone mortar or rub with a rag to remove the skin, and set aside as sesame kernels.

2. Make the pastry: Put the pot on the fire, pour in 600 grams of oil, heat until it is 80% hot, then remove the pot from the fire. Add 1.5 kg of flour, stir evenly with a spatula, spread it on a chopping board to cool, then add salt and star anise flour, and knead it into a crispy dough with your hands.

3. Make the dough: Pour another 1 kg of flour on the chopping board, make a small well in the middle, add 400 g of vegetable oil and about 500 ml of water, mix well and knead into dough.

4. Shaping: Wrap the pastry with the dough in a ratio of 40% to 60% and roll it into a 1 cm thick long piece. Fold it along the length and roll it thin again. Repeat two or three times. Finally roll it into a roll. Divide the dough into 50g pieces, roll them into balls and flatten them with hands. Take another piece of dough as big as a small date, dip it in oil, wrap it in the middle, and use a rolling pin to roll it into a round cake with thick edges and slightly thinner middle. Brush both sides of the round cake with water and stick sesame kernels on it, with more sesame seeds on the front side (the smooth side) and fewer on the back side. Place them one by one on the chopping board.

5. Baking: Put the griddle on the fire, clean it, and bake it until it is 70% cooked. Brush it with a layer of oil, and place the finished pancake with the back (the closed side) facing down on the griddle to bake. Turn over when the bottom turns yellow. Brush some oil on the griddle, bake the sesame cakes on the griddle while turning them, and take them out when they are evenly baked into a golden color. Then put the cake into the oven to bake. Bake the back side first, until the pancake turns light red and yellow.

3. Taiwan Wheel Cake

Material:

(1) 2 cups of medium-gluten flour, 1/2 cup of warm water, 4 tablespoons of lard, 2 tablespoons of sugar, (2) 1 cup of low-gluten flour, 1/2 cup of lard, (3) 225 grams of red bean paste or jujube paste, (4) a little egg yolk water

practice:

1. Knead ingredients (1) and (2) into water-oil dough and oil pastry respectively, divide each into 6 equal portions, wrap one piece of oil pastry in each water-oil dough, and repeat this process 3 more times to make oil pastry dough.

2. Add 1/6 of red bean paste or date paste to each piece of puff pastry, press it into a pancake shape, and then cut it into 6 equal strips with scissors. Fold each strip in the same direction with the opening facing upwards.

3. Brush with egg yolk water, put into the oven, and bake at 200℃ for 15 minutes.
