6. Let the dough ferment until it is 2.5 times larger than the original size. If your finger dipped in water and inserted into the dough does not shrink, the fermentation is complete.

7. Start the bread machine and knead the dough for a few minutes to release the air, then divide it into 6 small doughs of even size. Cover with plastic wrap and let rest for 15 minutes.

8. Use a rolling mill to measure and shape the relaxed dough into a rectangle.

9. Push up with both hands from bottom to top and roll forward.

10. Finish all the small doughs and place them with the seams facing down on a baking tray lined with tin foil at intervals.

11. Prepare some small black beans or black sesame seeds.

12. Stick them on the dough to make the caterpillar’s ​​eyes.

13. You can use greaseproof paper to cut into strips in the middle to prevent the fermented dough from growing larger and sticking together. If your baking pan is large enough or you don't think sticking will cause any problems, you can skip this step.

14. Put it in the oven and place a basin of hot water underneath to ensure the internal temperature and humidity. Cover the oven door for the second fermentation. This process takes about 45 minutes, depending on the temperature at the time.

15. Make the puffs on the surface while the fermentation time is going on. Weigh the material. I added milk powder to the low flour and it tasted better. You won’t need so much egg liquid to make the puff, so the rest can be used to brush the surface of the bread later.

16. Mix the low flour and milk powder and sift them.

17. Pour milk, sugar and butter into a small milk pot, heat on low heat until the butter melts and the liquid boils, then remove from heat.

18. Quickly pour in the sifted flour and stir with chopsticks until there is no dry powder. Spread it and let it cool slightly.

19. Beat the eggs.

20. Add to the dough that has cooled to hand temperature in three or four batches, stirring each time until the egg liquid is fully mixed before adding the next batch.

21. Not all of the egg liquid here is used up, it depends on how the batter absorbs water. Stop adding egg liquid when the batter becomes an inverted triangle of about four centimeters. Use the remaining egg wash to brush the bread later.

22. Put the mixed puff into the piping tape and cut a very small slit at the corner with scissors. The size of the opening determines the thickness of the puff strips you squeeze out later.

23. Take the fermented bread out of the oven and remove the water. Preheat the oven to 190 degrees. Brush the bread with egg wash.

24. After brushing with egg liquid, squeeze on the puff body. The denser the better.

25. Put it in the preheated oven and bake at 190 degrees for about 18 minutes. Depends on your oven temperature.

27. It is soft and fragrant. The inside is extremely soft.
