If the weather is very cold, it will be more difficult to ferment. My method is to put a basin of warm water underneath. It cannot be too hot, as it will kill the yeast. After fermentation, start weighing the small doughs. Because my oven is a mini type, I can only make 60g each. Use a rolling pin to flatten the dough and then roll it into a ball again. Place it on a baking tray for secondary fermentation, which takes about 15 minutes. After the second fermentation is completed, brush a layer of egg liquid on the surface of the dough, and then sprinkle a little white sesame seeds on the surface.
