1. Make the caramel sauce first: Put fine sugar into cold water, do not stir, and simmer over low heat until it turns a reddish-brown caramel color and has a caramel flavor, then turn off the heat immediately. Pour in hot water, add whipped cream and stir well to make caramel sauce. (ps, when adding hot water to caramel, even hot water will cause syrup to splash everywhere, so please be careful not to get burned; the evenly stirred caramel sauce tastes a bit like toffee and will become slightly sticky after a while. If you find any lumps, heat it on low heat for a few seconds before using it to dissolve the lumps.)

2.1 Add fine sugar (if you like a little salty taste, you can add a pinch of salt), and beat with an egg beater until smooth and even

3.2 Soften the butter at room temperature, beat it with a spatula until smooth, then add the softened cream cheese and mix well.

4.1 Add fine sugar to egg whites in 3 batches and beat until wet foam

5.2 Add the egg yolks one by one, stirring evenly each time before adding the next one

6.1 Sift in half of the low flour and baking powder, mix well with a spatula; then add 1/3 of the meringue and mix well; then sift in the other half of the low flour and baking powder, mix well; add the last 1/3 of the meringue and mix thoroughly

7.2 Scoop 1/3 of the meringue into the cheese paste and mix well with a spatula.

8. Add caramel sauce and mix it roughly. Don’t mix it too finely, otherwise it will not be easy to form marble patterns.

9. Pour the mixture into the mould, about 80% to 90% full, smooth the surface with a spatula, and gently knock the mould on a rag a few times to make the cheese paste more compact and smooth. (ps, I always forget to drop it a few times, I must remember it next time)

10. Preheat the oven to 180 degrees, put the cake batter in the middle and lower layers, and bake for about 40 to 45 minutes

11. Remove the cake from the mold while it is still hot after it comes out of the oven. Be careful that the cake texture is very soft and tender at this time, so do not break the cake when removing it from the mold. After the cake cools down to room temperature, put it in the refrigerator for 3-4 hours for a better taste.
