Vegetarian dumplings with leek and zucchini filling

Put 500 grams of flour into a bowl, blanch 1/4 of the flour with 100-degree boiling water, let it cool, and then use cold water to stir the remaining flour into a wheat ear shape.

Then knead the dough and cover with a wet towel and sugar for 15 minutes;

Wash the zucchini, remove the stem and cut it in half lengthwise. Use a spoon to remove the pulp and then cut it into four pieces lengthwise.

Sprinkle appropriate amount of refined salt on the shredded zucchini and marinate for 10 minutes to remove moisture, then squeeze out the moisture and put it in a bowl for later use;

Wash the chives, drain the water and mince, wash the ginger and mince, mince the fried dough sticks, wash the dried shrimps with water, squeeze out the water and set aside;

Put chopped leeks, fried dough sticks, dried shrimps and chopped ginger into the bowl with shredded zucchini, and add appropriate amounts of salt, oyster sauce, MSG and vegetable oil.

Stir well and set aside;

Roll the dough into even long strips, sprinkle some flour on them, and roll them into round shapes on the panel with both hands.

Flatten the dough with your palm.

Use a rolling pin to roll the dough into a slightly thicker skin in the middle for later use.

Then put the filling on the dough and wrap it into the shape you like.

Add water to the steamer and bring it to a boil. Put the wrapped dumplings in the steamer and steam them on high heat for 10 minutes. Turn off the heat and remove from the steamer.

The meal is ready to be served!
