How to make Jinsha sweet corn rolls

1.1 Spread the salted egg yolk on the seaweed.

Use the tips of your little finger and ring finger to gently spread out the rice. Do not rub it. Keep each rice grain intact, but spread it out. Some people may say that this is unnecessary, as they will all stick together after a while if you press them. Yes, they will stick together, but they cannot be broken. If the rice grains have been pressed so hard that their shape cannot be seen and they are completely mushy together, then it is a failure and the taste will be different from authentic sushi.

3.1Sprinkle the mentaiko evenly on the vinegar rice.

5.1 Turn it over and lay it on the bamboo mat with the seaweed facing up. Place avocado, sweet corn, bean curd, and peeled chili peppers on the seaweed (sweet corn, Japanese fried bean curd, and peeled chili peppers are all sold in vacuum cans in supermarkets).

6.2 Then cover with plastic wrap.

7. Add vinegar rice on both sides, squeeze salad dressing on the rice, and place small pieces of seaweed on the exposed avocado and other ingredients.

8. Use the bamboo curtain to press one side first and roll it up into shape.

9. Open the bamboo curtain and roll the side that has just been rolled into a cylindrical shape to the other side and then roll it up again.

10. Press the whole roll several times with both hands to ensure that it will not fall apart (the qualified rolled rice grains will not be deformed by pressure, but just stick together, and will not fall apart even if picked up with a toothpick, so you can only use negative force when applying force, and do not use positive force to press hard)

11. Use plastic wrap to cover the ingredients and shape them. They can be made into triangles, rectangles, circles, etc. according to your personal preferences.
