1. Soak 100 grams of black rice in tap water 1 cm higher than the black rice overnight, then drain the water.

14. Use your hands to press the air out of the glutinous rice paste storage bag, and press it into a preliminary size and shape. The thickness of the glutinous rice dough sheet should be 1 cm, the length should be equal to the length of the fried dough sticks (the fried dough sticks I bought were only 15 cm), and the width should be enough to wrap the fried dough sticks.

15. Use a rolling pin to flatten the glutinous rice paste from the opening of the plastic bag to the sealed end.

16. When it is rolled to a certain extent, fold up the part of the bag without glutinous rice paste to prevent the glutinous rice paste from having an irregular shape due to too much space in the bag.

17. After folding up the unnecessary plastic bags, press the empty plastic bags under the glutinous rice paste and continue to knead it. This way, the glutinous rice paste will be neatly kneaded and will not move around.

18. After kneading the glutinous rice paste, use scissors to cut along the edge to the seal at the bottom of the plastic bag.

19. Cut the seal at the bottom and then tear open the plastic bag.

20. Spread a thin layer of black crispy pastry (make sure the glutinous rice at the bottom is not visible), leaving 2cm around the glutinous rice dough without spreading the black crispy pastry.

21. Add the fried dough sticks.

22. Use the layer of plastic bag at the bottom of the glutinous rice dough to roll up the glutinous rice dough to wrap the entire fried dough stick.

23. Finally, wrap the glutinous rice rolls wrapped in the plastic bag with a bamboo curtain and press them down slightly. Don't press too hard to avoid deformation of the glutinous rice rolls.
