How to make black rice flour and wheat ear vegetarian stuffing buns

1. Mix appropriate amounts of black rice flour and white flour, add yeast and a little white sugar, use warm water to make black rice dough, and place it in a warm place to ferment.

2. Soak the dried mushrooms, bean curd sticks and vermicelli.

3. Prepare some Chinese cabbage, carrots and coriander.

4. Wash and cut the carrots into small cubes, then stir-fry in a pan.

5. Chop the soaked shiitake mushrooms, bean curd sticks, Chinese cabbage, coriander, and vermicelli into small pieces, add dried shrimps, oyster sauce, salad oil, sesame oil, thirteen spices, green onions, ginger, pepper, salt, and MSG.

6. Mix all ingredients well.

7. When the dough has fermented to 2 to 2.5 times its size, dip your finger in flour and put it into the dough. If the hole does not shrink or wrinkle, it means the fermentation is successful.

8. Roll the fermented dough into a round shape, release the air and cut it into even-sized pieces. Flatten the pieces with your hands and roll them into round bun skins that are slightly thicker in the middle and thinner at the edges. Fill the middle with a proper amount of stuffing. First, fold the skin inward at the beginning, then glue the left and right sides of the skin together alternately, and finally glue the tail together to make wheat ear buns.

9. Place the wrapped wheat ear buns on the oiled steamer and let them rise again for 15 minutes. Then turn on the heat and steam them for 10 minutes and simmer for 5 minutes before serving.
