How to cook pork ribs in tomato sauce

3. After washing the tomatoes, use the tip of a knife to gently make cuts on the skin. (The cuts make the tomatoes easier to peel.)

4. Add water to the pot and bring it to a boil. Put the tomatoes into the boiling water and blanch them for about one minute, then take them out. (Do not discard the water used to scald the tomatoes)

5.121 Use the boiling water left in step 4, add scallion knots, 2 pinches of ginger, 1 spoon of cooking wine, and blanch the ribs.

6.212 Look, the tomato skin can be peeled off easily, and then cut the tomato into pieces. (Because the tomato skin will affect the taste of the ribs, so don’t add it.)

7. Cook for about 5 minutes until the blood foam and dirt are cooked out, then turn off the heat, remove the ribs and rinse them clean.

8. Drain the ribs, add cooking wine, balsamic vinegar, chicken essence and light soy sauce and marinate for 15 minutes. (The soy sauce is already salty, so I didn’t add any salt)

9. Add appropriate amount of oil into the pot, put in white sugar, and stir-fry sugar color over low heat.

10. It will be fine when it turns slightly light brown.

11. Immediately add the marinated ribs and stir-fry evenly over low heat. (If the sugar color is over-fried, it will become bitter)

12. Over medium-low heat, add minced garlic and ginger slices and continue stir-frying for about 2 minutes.

13. Add enough water to cover the ingredients, cover the pot and cook.

14. When the soup is cooked to 2/3 of the ingredients, add the chopped tomatoes.

15. When one third of the soup remains, add 2 tablespoons of tomato sauce and cook over high heat until the soup covers the ribs. Sprinkle with sesame seeds.

16. If you don’t add salt to the dish, it won’t become salty-sweet. The specific amount of seasoning depends on the amount of ingredients and your own taste.

17. It takes about half an hour to stew the ribs until they are well-flavored.

It is not difficult to understand spare ribs in tomato sauce, but it is not very easy to make it well. This requires our own attention and diligent practice.
