How to marinate sweet and sour chicken feet

【Method 1】

Main ingredients: 9 chicken feet, one can of beer (500ml)

Seasoning: Homemade chili sauce (a little (negligible)), braised soy sauce (1/2 tablespoon), cooking wine (1 tablespoon), ginger (3 slices), seasoning packet (see tips) (appropriate amount), rock sugar (3-4 pieces), chicken powder (a little)

practice:

1. Cut the nails of the chicken feet, wash them with clean water and drain them for later use.

2. Heat the pan, add appropriate amount of oil and fry the spices over low heat

3. Add ginger and chili sauce and stir fry

4. Add chicken feet on medium heat and stir fry evenly. Pour in braised soy sauce and stir fry

5. Add a few rock sugars and cooking wine and stir fry.

6. Pour beer into the chicken feet, bring to a boil over high heat, and simmer on the lowest heat for about 40 minutes.

7. Add a little chicken essence, heat up high to reduce the sauce, shake the pan lightly, try not to stir-fry, keep the skin intact, and eat while hot.

【Method 2】

Main ingredients: Chicken feet (8 pieces)

Seasoning: 50g sugar, 50g water, 3 tablespoons soy sauce, 10g rock sugar, 3 star anise, 4 bay leaves, 1 teaspoon pepper, 300ml water

practice:

1. Put 50g of sugar and 50g of water into the pot and cook until sugar color is formed;

2. When the sugar turns golden brown, add the chicken feet and stir-fry to coat them with sugar (if the sugar juice is stretched to stringy, add a small amount of water and stir-fry again);

3. Take a milk pan, add oil and heat it to 40% hot;

4. Fry twice. It needs to be turned over during this period;

5. Fry until red, then remove from oil and drain;

6. Prepare marinade ingredients;

7. Pour the marinade into the pot, bring to a boil over high heat, then simmer over low heat for 15 minutes;

8. Soak the fried chicken feet in the marinade for more than 1 hour;

9. After soaking, the chicken skin has expanded;

10. Put the marinade and chicken feet into the pot and cook over high heat until the marinade is dry.

【Method 3】

Main ingredients: Chicken feet (appropriate amount)

Seasoning: ginger slices (appropriate amount), garlic (appropriate amount), scallion (appropriate amount), cooking oil (appropriate amount), dark soy sauce (appropriate amount), Wei Ji Xian soy sauce (appropriate amount), oyster sauce (appropriate amount), braised soy sauce (appropriate amount), sugar (appropriate amount), vinegar (appropriate amount), chili powder (appropriate amount), cooking wine (appropriate amount), fish sauce (appropriate amount)

practice:

1. Remove the nails from the chicken feet, chop them in half, clean them, slice the ginger, smash the garlic, and cut the scallion into sections for later use.

2. Boil water in a pot, add chicken feet, ginger slices, scallions and cooking wine. After the water boils, cook for another 5 minutes until the chicken feet are 70% cooked.

3. While cooking the chicken feet, prepare the sauce: dark soy sauce, light soy sauce, cooking wine, fish sauce, oyster sauce, braised soy sauce, vinegar, sugar and a small amount of water to make the sauce for later use

4. Take out the cooked chicken feet, wash them in clean water and drain them.

5. Heat the wok, add oil, and fry ginger, garlic, and scallions until fragrant.

6. Add the chicken feet and stir-fry until the water is dry.

7. Add the sauce and simmer. When the sauce is almost dry, add chili powder and stir well. Then taste it and add sour, sweet, salty and spicy as appropriate to adjust it to your taste.
