How to cook carp in black bean sauce

1. Wash the fish, add salt, cooking wine, a little sugar and chicken essence and marinate for one hour.

2. After frying, use another pot, add clean water, place the fish on the steamer, cover with lid and steam over high heat for 20 minutes. (Big fish should be steamed a little longer to avoid undercooking the fish head)

3. Pour oil into the pan and fry the fish over medium-low heat until both sides are golden brown. (Fry one side first and then turn it over to fry the other side. Be gentle when turning it over to avoid breaking the fish.)

4. Prepare the ingredients: bean paste, fermented black beans and peppercorns. (This is not the amount you will use. You won’t need this much. I just took it out to prepare it so that it won’t be difficult to take when I’m cooking.)

5. While steaming the fish, prepare the ingredients: chop the green onion, mince the ginger and garlic, and add an appropriate amount of starch.

6. Take an appropriate amount of starch and add water to make it thick. The starch does not need to be too much, the purpose is to make the soup thick.

7. Heat oil in a pan, add bean paste, ginger, garlic, fermented black beans, and peppercorns, and stir-fry over low heat until fragrant. (Don’t use too little oil, twice as much as usual for cooking)

8. Add appropriate amount of water and bring to a boil.

9. Add the thickened starch water, stir while pouring, and cook until the soup becomes thick.

10. Sprinkle chicken essence, pepper powder and chopped green onion and mix well, then the soup is ready. (Add cilantro, green peppers, and even better!)

11. Use a spatula to lift the steamed fish to a plate and place it on a plate. Be careful not to break the fish.

12. Use a spoon to pour the prepared sauce over the fish. Eat with sauce, and eat while hot!
