21. After another five minutes, open the lid to check whether the water has completely evaporated, then turn off the heat. (This is when the fire is turned down to low, after eight minutes.)

22. After turning off the heat, cover the pot and simmer for five minutes.

23. Rice after simmering for five minutes.

24. Serve immediately.
