How to make sauerkraut rice noodles

I believe many people have no idea how to make sauerkraut rice noodles. This is a mouth-watering dish that requires two raw materials: chicken and vegetables. The chef's superb cooking skills make the delicacy even more attractive. This is also a health-preserving recipe that can be made often for the elders at home.

1. Prepare the ingredients, chop the large pieces of sauerkraut into small pieces.

3. Soak the rice noodles in boiling water until soft, then rinse twice with cold water to make them fresher and less sticky.

4. Wash the Chinese cabbage leaves, tear them into small pieces, put them into boiling water and blanch them until they are cooked.

5. Chop ginger and garlic, and chop the scallion whites and scallion leaves separately.

6. Heat the pan until the oil is 70% hot, turn to medium-low heat, add ginger, garlic and scallion and sauté until fragrant.

7. Pour in the pickled cabbage and stir-fry until fragrant. Add a small spoonful of Pixian bean paste and pepper powder and continue to stir-fry until the red oil comes out.

8. Add two large bowls of water and fresh soy sauce and bring to a boil over high heat.

9. Cover the lid, bring to a boil, then turn to medium-low heat and simmer for three to five minutes to bring out the sauerkraut flavor.

10. Open the lid, put in the rice noodles, and boil over high heat.

11. Add the leaves, turn off the heat immediately after boiling again, sprinkle with chicken essence, pour some sesame oil, and serve.

12. Serve in a bowl and sprinkle with chopped green onions
