1. Place syrup, salad oil, soap water, salt and water in an oil-free container.

2. Mix all ingredients well.

3. Sift the flour and add it into the evenly stirred syrup.

4. Mix the flour and syrup evenly. The dough is relatively sticky at this time.

5. Cover with lid (wrap with plastic wrap if there is no lid) and refrigerate for 1 to 2 hours.

6. Take out the container and knead the dough until it is smooth. The dough will not be sticky after refrigeration. After kneading, let the dough relax in sugar for ten minutes.

7. Weigh 60 grams of the red bean paste and knead it into smooth balls. (The method of making the red bean paste filling is on my homepage, so I won’t repeat it here)

8. Do not knead the relaxed dough anymore. Roll it into strips and cut into pieces. Weigh each piece of dough at 70 grams and knead it into a smooth ball.

9. Put some dry flour on your hands, take a dough ball and put it into the palm of your hand and knead it. Let a thin layer of dry flour be coated on the surface of the dough (it must be a thin layer). The purpose is to ensure that the bean filling and dough can stick together well and be easy to remove from the film.

10. Flatten the dough and put a bean paste ball into it, completely wrapping the bean paste like making a steamed bun (as shown in the picture).

11. Knead the dough filled with bean paste into an oblong shape (for easier molding).

12. Put it into the mold, press it down a little bit at a time, otherwise the shape of the mooncake will not look good.

13. Remove the pressed mooncakes from the film and place them on the baking tray, making sure to leave some space between each mooncake.

14. Preheat the oven to 200 degrees for three minutes.

15. Put the baking tray into the oven and bake at 170 degrees for seven minutes.

16. Spray water on the mooncakes to prevent them from cracking.

17. Put it back into the oven and continue baking for another 17 or 18 minutes.

18. Brush a thin layer of egg yolk liquid on the surface of the mooncake to make the mooncake beautiful in color.

19. Put it in the oven and continue baking for five to ten minutes. Pay attention to the color of the mooncake surface.

20. The fragrant red bean mooncakes are out of the oven.
