How to make Cantonese-style mooncakes with red bean paste

1. Pour the invert sugar slurry into a container, add cooking oil and soap water and stir well.

4. Divide the dough and filling into small balls of equal size and shape them into balls. I have 50g and 100g mooncakes. The 50g mooncake has 15g of dough and 35g of fillings. 100g of mooncake is made of 30g of dough and 70g of filling. The ratio is 3 to 7. If you like thicker skin, 4 to 6 is also fine. It depends on personal preference.

Each brand of oven is different, the temperature should be based on your own oven.

9. Brush the mooncakes with egg wash for the first time after 10 minutes of baking, and brush with egg yolk wash for the second time after 15 minutes. The mooncakes are ready to be colored after 5 minutes of baking.

After 10 minutes, the mooncakes are baked. After they cool down, pack them and store them in the refrigerator. You can also eat them directly.
