How to make Beijing-style red mooncakes

1. Prepare the ingredients for the mooncake skin and weigh all the ingredients for later use.

2. Put the flour into a bowl, add maltose, baking soda, cooking oil and sesame oil, mix well and make it flocculent

3. Then add an appropriate amount of boiling water and make it into a non-sticky mass.

4. Cover with plastic wrap and let it cook at room temperature for one hour.

5. Prepare the fillings, crush the rock sugar and cooked walnut kernels, chop the green and red dried fruits, and prepare the cooked black sesame seeds.

6. Put all the fillings into a bowl and add a little maltose and cooked glutinous rice flour.

7. Mix well and form into balls for later use

8. After the sugar has risen, take out about 30 grams of the dough and knead it into a ball. Also take out about 25 grams of the black sesame filling and knead it into a ball.

9. Press the dough with your hands and wrap the fillings

10. Knead the dough with the thumb and fork to seal. Set aside for later use

11. Prepare about 5 grams of red yeast rice powder, add a little water and mix into a slurry, and then prepare a small bottle cap.

12. Then put the raw mooncake on the baking tray, stick the red yeast rice paste on the bottle cap, and gently stamp the red circle on the surface of the mooncake.

13. Put it into the preheated 180 degree oven, bake it for 20-25 minutes, spray a layer of water mist on the surface after 8-10 minutes of baking, and continue baking.

14. Bake until the surface is golden brown.

15. Take it out and put it on the grill to cool naturally. After cooling, return to the oil for 48 hours

16. After the oil is restored, you can enjoy the thin-skinned, large-stuffed, crispy and fragrant mooncake.
