How to make mooncakes without additives

Some people may think that cooking at home is too complicated. In fact, it is not impossible to have a delicious and nutritious dinner at home as long as you master some simple recipes. It is easy to make mooncakes without additives. Even if you don’t have a talent for cooking, you can still let your family eat delicious dishes.

1. Boil sugar water into syrup: This step requires boiling sugar into syrup color, and it needs to be boiled for a long time, which is quite complicated. You can first fry some of the white sugar into sugar color, add half a bowl of water and put the remaining white sugar in and boil over high heat. This way the syrup will be more condensed and the syrup will form a straight line when you pour it with a spoon. Pour the syrup and let it cool.

2. Prepare the filling: Soak the red beans overnight, stew them in a pot until they melt, and blend them in a blender (if you don’t have a blender, you can use a spoon to mash them). Add some oil to the wok (you can also leave it out, depending on your personal taste), put the red bean filling in and stir-fry until most of the water is dried up and becomes a paste. (If you have time, you can also bake it in the oven until it becomes puree)

3. Make the dough: Add oil to the syrup (ratio 3:1) and beat with your hands until the oil is dissolved in the syrup. Add flour (the flour used for making bread will do), and mash into a paste. It should not be too dry, otherwise it will be difficult to wrap the filling.

4. Divide the filling: There is no scale: You can divide it roughly according to the mooncake mold (as long as the filling and skin can fit into the mold). The ratio of filling to dough is 7:3.

5. Wrap mooncakes: Spread out the dough and use your palm to slowly wrap the filling and shape it into a round shape. Each dough ball should be roughly the same size so that the baking time can be controlled well.

6. Moulding: Sprinkle some dry flour in the mould, put the dough ball in, press it and remove it from the mould.

7. Make mooncakes with good molds.

8. Bake the mooncakes: Arrange the mooncakes in the mold, sprinkle some water, bake at 180 degrees for 8 minutes (I made 50 grams, so the baking time was shorter), take them out, brush with oil and bake for 3 minutes, take them out, brush with oil, wait to cool, and brush egg liquid on the patterns. Repeat the operation 2 times. (Brush with egg wash 3 times to make it look beautiful.)
