3. After cooking, remove the hair and fat from the skin of the pork and cut it into strips. Cut the beauty pepper into shreds. My pork skin had already been depilated when I bought it, so I only removed some of the fat this time.

4. Heat the pan with cold oil, put in excess fat and simmer over low heat until it becomes oil residue.

5. Add a spoonful of Pixian bean paste and stir-fry until red oil comes out.

6. Add onion, ginger, garlic, dried chili peppers, peppercorns and appropriate amount of sugar and stir-fry until fragrant.

7. Add the pork skin and stir-fry for a while. Don’t stir-fry for too long, otherwise the moisture will dry out and the pork will become hard.

8. Add the beauty pepper and stir well.

9. Add cooking wine, soy sauce, vinegar and appropriate amount of salt. Turn off the heat and add MSG and serve.
