How to make vanilla crispy puffs

If you often go to restaurants for convenience and end up having gastrointestinal problems or diseases, it is not worth it. For the sake of our health, we'd better learn some home cooking methods and make them at home. The method of making vanilla crispy puffs is simple and most people can learn it quickly.

1. Make the crispy skin first:

2. Melt the butter first, add sugar and low flour, and knead evenly.

3. Roll the dough into a round shape. Refrigerate until ready to use.

4. Make puffs:

5. Put the milk and butter together and boil them on low heat in an induction cooker until the butter is completely melted and boiling.

6. Adjust to the lowest heat, quickly add low flour, and stir quickly until a film forms on the bottom of the bowl. Turn off the heat and let it cool

7. Add the eggs in batches and stir quickly to allow the eggs to fully absorb into the batter and quickly become viscose. Add another egg and repeat the above steps until completely mixed.

8. Add the egg and stir quickly to form a mucous membrane. Stir for a while before adding another egg.

9. There will be layers inside when baking. Otherwise it's hollow inside.

10. Put the paste into a piping bag, cover the baking tray with greaseproof paper, squeeze out the paste into the size you need, and place the reserved crispy slices on it. Don't make it too thick. Thinner

11. Bake at 190 degrees for 30 minutes. Do not open the oven door for the first 20 minutes. If you open the door and let the air out, it will be like a pancake. Adjust the temperature according to your own oven.

12. Vanilla Custard:

13. First, cut the vanilla strips in half. Put the milk and vanilla strips together and boil them. Cover and simmer for 3 minutes. This will make the vanilla pods taste better.

14. After boiling, remove from heat and let cool a little, then add egg yolk. Mix well

15. Add powdered sugar and low flour, stir evenly, use the lowest heat of the induction cooker, and continue stirring until the slurry becomes thick and filmy. Be careful not to get a mess at the bottom, keep stirring

16. Stir until it becomes thick, sieve out the vanilla pods, put in the refrigerator for later use, and store in the refrigerator

17. Beat evaporated milk, powdered sugar and Baileys liqueur until 90% fluffy. Mix the reserved vanilla custard sauce and whipped milk in a 1:1 ratio. Open the cooled puffs from the bottom or side and fill them with stuffing. Sprinkle moisture-proof powdered sugar on the outside and serve
