How to make chocolate sauce puff pastry

1. Prepare the ingredients and weigh them in advance.

2. Soften the butter at room temperature and add powdered sugar and mix well.

3. Sift in low-gluten flour.

4. Stir until there is no dry powder.

5. After mixing, place it on plastic wrap and roll it into a 12 cm long circle. Refrigerate for 1 hour.

6. Next, make the puffs, beat the eggs and sift the flour.

7. Pour milk, butter, sugar and salt into the pot at once.

8. Bring to a boil over medium heat then turn to low heat.

9. Pour in the flour all at once.

10. Stir as quickly as possible until a thin film forms on the bottom of the pot, then remove from the heat quickly. (Actually, the noodles are cooked and stick to the bottom of the pot, and some of the water evaporates at the same time)

11. Let the temperature drop to 60 degrees and it will not be hot to the touch. Add egg liquid in small amounts at a time. Stir evenly each time and then pour in some more egg liquid. Especially at the end you need to add a little bit at a time.

12. Stir until it forms an inverted triangle when picked up with chopsticks, with the tip about 4 cm from the bottom, and it does not fall off.

13. Put the piping bag into the round piping nozzle.

14. Pour in the batter and cut a small opening.

15. Squeeze vertically and evenly into a baking tray covered with oilcloth, as shown in the picture.

16. Use a small spoon to tap the small pointed corners. Preheat oven to 210 degrees.

17. Take out the puff pastry and cut it into 20 slices 0.6 cm thick.

18. Cover the puff body.

19. Put it into the second to last layer of the oven. After about 10 to 15 minutes, turn it to 180 degrees for half an hour until it turns light brown.

20. After cooling, cut the puffs, squeeze in the whipped cream, put the fruit pulp on top, pour chocolate sauce on the surface, and sprinkle with pistachios for decoration.
