Choosing rice: There are requirements for the rice used to make rice noodles. Not all rice can be used to make rice noodles. Nowadays, handmade rice noodles generally use aged early rice, which makes the rice noodles tough and not easy to break. Aged early rice can be purchased from local granaries.

Grinding: Soak the aged early rice in water, and when the rice grains become soft, use an electric grinder to beat the rice into pulp.

Steaming: If the beaten rice paste is too dry, add appropriate amount of water to dilute it. The rice milk should not be too dry nor too thin. Next, find a flat stainless steel plate, apply a little oil on the plate, and pour the rice slurry evenly into the plate, not too thick. Put water in a pot and bring it to a boil. Put the round disc into the pot and steam it for 3-5 minutes and take it out. Brush the middle of each slice with oil. Cut into strips of your desired width.

Another method is: boil the water and pour the beaten rice milk into the strainer. Boil the rice noodles in water for 3-5 minutes, remove from the water and rinse with cold water.
