How to make lemon pickled fish

1. Clean a grass carp, cut off its head, and slice it into three pieces from the tail: two pieces of fish meat and one piece of fish bone.

2. Cut the fish meat into fillets obliquely from the tail and chop the fish bones into sections.

3. Add appropriate amount of salt, cooking wine, pepper, egg white and starch to the fish fillets, mix well and marinate for 30 minutes.

4. Prepare the ingredients: wash the sauerkraut and cut it into sections, cut the lemon into slices, cut the onion and ginger into slices, smash the garlic, cut the dried red pepper into sections, cut the Hangzhou pepper and millet pepper into small sections, and cut the coriander into sections.

5. Heat oil in a pan, add onion, ginger, garlic, and dried red pepper and stir-fry until fragrant, then add the fish head and fry until both sides are golden brown. Then pour in clean water, add the fish bones and simmer for 30 minutes.

6. Heat oil in another pan. Add onion, ginger, garlic, dried red pepper and Sichuan peppercorns and stir-fry until fragrant, then add sauerkraut and pickled peppers and stir-fry. Pour in the previously stewed fish soup, add appropriate amount of salt, pepper and chicken essence to season, add lemon slices and cook for 15 minutes.

7. Add fish fillets. Add the fish slices one by one, gently push the fillets with a spatula, and cook until the fish fillets change color and are cooked through, about two minutes.

8. Pour the cooked fish fillets into a bowl, add chopped green and red peppers, heat oil in a pan, and pour the oil over the chopped peppers.

9. Finally, sprinkle with coriander.

10. Fresh, delicious, nutritious, healthy, sour and spicy lemon pickled fish is ready.
